Makassar Beef Ribs Soup / Sop Konro



First time I ate sop konro at Maming's restaurant, Jakarta. It was very unique and delicious. Although not tried in his native region, Makassar. Konro soup served wherever and whoever cooked it always presents a special flavor


Ingredients :

  1. 1 kg of beef ribs, cut into pieces
  2. 2 ltr water
  3. 2 cm cinnamon
  4. 3 grains of cloves
  5. 3 cm galangal
  6. 2 bay leaves
  7. 3 tablespoons cooking oil for sauteing
  8. ½ tbsp salt
  9. 5 onions, thinly sliced
  10. 2 tbsp tamarind water java

Subtle Seasonings:
  1. 5 onions
  2. 3 cloves garlic
  3. 1 rounded teaspoon pepper
  4. ½ teaspoon nutmeg
  5. 2-3 kluwek fruit, take the meat
  6. 50 ounces cooked red beans boiled
  7. 1 ¼ tablespoon salt

Directions:
1. Boil ribs, cinnamon, cloves, bay leaves, galangal, salt and java acidic water.
2. Ground spices and saute the onion slices until fragrant.
3. Pour the seasoning stir into stew and cook ribs until cooked flavor is absorbed and ribs.
4. Serve hot with chilli sauce and lime juice.
